Vintage 18.5" Lee Valley / Sabatier Butcher's / Slaughterhouse Breaking Knife For Sale

This Knife started life in France by Thiers-Issard / Sabatier as a commercial Chef's knife blank. They sat in a basement until the blanks were sold to Lee Valley Tools of Canada in the 1990's as a blank. Lee Valley Tools acquired the 5/16" thick x 18-1/2" blanks, did the grinding, sharpening and hardening then added the Rosewood handles with the brass rivets.

Eventually being sold by Lee Valley Tools this Vintage  18.5"  Commercial Butcher's/ Slaughterhouse Breaking Knife labeled "Peasant" by Thiers-Issard / Sabatier became the Lee Valley Tools 4-Star, Elephant as etched into the knifes High Carbon Steel Blade. With a total length of 18.5", a cutting edge of 13" and the Rosewood handles at 5.5" with a total weight of 2.25lbs. it is surely a very useful and very collectable tool.

The condition of this knife appears gently used with a good sharp cutting edge and some patina with the carbon stains and a few scratches in the steel and handles. There is no sign of abuse only love.
